WHAT ARE THE BENEFITS OF BARAKA POTATO?

Ingredients

  • 8 Baraka potatoes
  • Corn or sunflower oil for frying

Preparation mode

Peel and cut the potatoes into 1 cm thick round slices. Cut each slice into very thin slices. Spread on a clean dish towel and dry as much as possible. Line 2 baking sheets with paper towels. Fill 1/3 of a large pot with oil. Heat over medium heat. When a cube of bread is fried and browned in 1 minute, the oil is on point.

Carefully place a portion of potato slices. Fry for 4-5 minutes, stirring so they don’t stick together, until soft but not browned. Remove with a slotted spoon and spread on paper towels in a baking dish. Repeat the process until everything is fried. Add more oil to the pan if necessary. Return to heat until a cube of bread is golden in 45 seconds. Fry the potatoes again, a few at a time, for 2-3 minutes, until golden and crispy. Remove with slotted spoon, transfer to other baking sheet and leave to warm. Once they’re done, remove the pan from the heat and place it somewhere safe until it cools.

This recipe can be prepared for an afternoon snack or served as a snack.

Baraka potato soup

Ingredients

  • 2 Baraka potatoes
  • 1 onion
  • 1/2 of leek
  • Oil
  • Olive oil
  • Water to taste
  • salt to taste
  • Black pepper to taste

Preparation mode

Chop the onion, potato and leek into small pieces. Heat the oil and add the onion. Make the mixture, adding the leeks and cook until it reaches transparency. Add the potatoes, add water and cook over low heat to a boil. Take the time and let the potato cook. Remove from heat and process until you get a uniform texture. Season with salt and pepper to taste and serve with a little chives and olive oil.

Baraka potato soup can be served on a cold day, it is very tasty.

Baraka potato dumplings

Ingredients

  • 1 kg of Baraka potatoes (remember to cook with the skin still on)
  • 300 g of white flour
  • 1 egg
  • Parmesan cheese
  • Nutmeg (to taste)
  • Seasonings of your choice.

Preparation mode

Squeeze hot potatoes into the juicer. No need to remove the skin, it will stay in the potato masher. Take it to a container and let it cool. Add the egg, 150 grams of flour and whatever seasoning you prefer. Knead everything and add the rest of the flour so that the dough has a consistent appearance. Take some dough and on a floured board, shape some rolls about the thickness of a finger and cut them into pieces of approximately 1.5 cm. Put the gnocchi to cook little by little, always with plenty of water in the pan, already with salt and a little oil. When the balls start to emerge, remove them from the water and place them in a colander. In a glass bowl, place gnocchi and sauce, sprinkle with cheese and bake.
