It is very important to choose the fruit well. Let’s learn some tricks to differentiate good dry coconut from spoiled one. Choose to hit the shell with the handle of a knife or a coin, if the sound of the coconut is hollow, it may not be good for consumption. Otherwise, if the sound is squeaky, it is a sign that the fruit is fresh.

It is also important to know how to open the coconut without hurting its pulp, just follow the step-by-step instructions below to succeed in this procedure.

  • With the help of a knife or scissors, pierce the coconut in one of the 3 holes at the top and remove the water from the coconut
  • With scissors, cut off the excess lint from the coconut, the less you have the better.
  • Burn the coconut in a stove over a low heat.
  • Leave on fire for approximately 10 minutes, or until you hear a crackle.
  • With a knife (or even with your hands) finish breaking where it cracked.
  • Allow it to cool a little, and with the help of a sharp knife removes the pulp from the skin.
  • Ready! Now you have fresh coconut pulp. Yields approximately 250g of pulp.

Clean the coconut pulp. Beat in a blender with enough coconut water to make a thick cream. Make sure the mixture is at room temperature. Transfer to a bowl or glass pot and mix in the probiotic sachet. Place in a protected place, inside a Styrofoam box, cooler bag or wrapped in a towel. Wait 5 to 6 hours.

Store in refrigerator for up to a week.

This is a very nutritious recipe and can be introduced for breakfast with some other fruit.

When we buy dried coconut still in its shell, the food usually has a certain straw around it. To remove it, it is necessary to place the coconuts on a baking sheet and put it in the oven, at maximum temperature, for approximately 15 minutes or until the coconuts have cracked in half, so you can easily remove the straw. It is important to point out: be careful, because when you remove it from the oven, the coconut will be hot for a few minutes. If you need to remove without waiting to cool, use a cloth or thermal glove to help with the process.

To open the coconut, the same process is used, however, when they split, while still hot (use a dish towel to hold it – avoid burning your hand) with the aid of a spoon, you will take the hoopoe out of the shell.


If you prefer to dry the coconut at home, a more laborious process is necessary, which should be carried out with the green coconut, see below:

  • Preheat oven to 177°C.
  • Drill the coconut between your “eyes” using a 1 cm drill bit. (To remove water).
  • Place the coconut directly on the oven rack.
  • Remove the coconut from the oven and wrap it in a towel, creating a bag. Hold the end of the towel to keep the coconut steady and tap it several times with a hammer to break it.
  • Pluck the pulp from the coconut with a strong knife, such as a trimming knife. The pulp may have a thin brown skin attached to the side where it was touching the skin. Remove skin with a vegetable peeler.
  • Reduce oven temperature to 12°C
  • Chop the coconut into pieces with a food processor and spread on a baking sheet. Follow the coconut in the oven for 10 to 15 minutes.
